Why did you become plant based?
Kathy’s husband started cooking vegan meals and at first she was reluctant to give up her burgers, but once she realised how amazing the food tasted she fully embraced it.
A few years after turning vegan she realised that whilst there might not be any meat products in her diet, it wasn’t actually that healthy. This prompted her to reassess and as a result her diet is now filled with whole food plant based foods. Her skin improved and she lost 40 lbs!
How did you end up writing cookbooks?
Her aunt jokes how did the the girl who couldn’t boil an egg to an amazing author of 3 cookbooks. Kathy’s driver is always to try to find ways that make plant based foods more accessible, her cookbooks are not necessarily for those who want to become vegan, but more for people who are inquisitive about plants and want to eat healthier.
She encourages clients to make a plan – writing a meal plan helps you make better choices and the more plant based choices the better.
Isn’t it really expensive to eat vegan?
If you fill your trolley and plate with vegan alternatives such as burgers and non-dairy cheeses it can be very expensive to eat vegan. However if you concentrate on filling your plate with beans and lentils and seasonal vegetables it can be considerably cheaper.
