There is no need to put your slow cooker away when the weather gets warmer, just rethink your heavy meat stews for fresher lighter options such as this zingy chicken
Ingredients – serves 2
- 2 chicken breast, bone and skin on
- ½ tsp ground cumin
- ½ tsp ground coriander
- 1 tsp garam masala
- ½ tsp chilli flakes
- ½ tsp paprika
- 1 can beans drained (any variety I used cannellini)
- 2 cloves garlic crushed
- Half lemon sliced
- Juice of half a lemon
- 20 cherry tomatoes – 10 cut in half and 10 left whole
Instructions
- If you the time and the inclination brown the chicken skin, if you don’t it won’t hurt but it just gives the sauce a bit more depth of flavour
- Combine the dry spices and rub over the chicken, the place into the bottom of the slow cooker skin side up
- Top with the other ingredients and squeeze over the lemon juice
- Cook on low for 6-8 hours or high for 3-4 hours
This creates its own sauce and so although it is quite filling I like some grains with mine to soak up the sauce, and a side of greens.
