Soya Bean and Chorizo

The inspiration for this dish came from Omar Allibhoy recipe in Spanish Made Simple.  His recipe used fresh broad beans, but this was created on the fly one evening and these are the ingredients that I always have in the house, if you have fresh broad beans they would be great, but if you only had frozen peas that would work equally well, just reduce the cooking time slightly.  The key is to make sure that the bean is the king.
Ingredients  serves 3 as a side or 4 as tapas

  • 1 small red onion chopped
  • 2 fresh chorizo sausages (approx. 150g) chopped
  • 200g frozen soya beans
  • 1 tsp dried mixed herbs
  • 3 cloves garlic roughly chopped

Instructions

  1. Begin to fry the chorizo in a pan, as soon as it starts to release oil add the onions, garlic and herbs and continue to fry until the chorizo and onion are just turning brown (about 4 minutes)
  2. Whilst the chorizo is cooking run the beans under a cold tap to partially defrost
  3. Add soya beans to the ban and stir through so that they are fully coated in all the lovely juices
  4. Cook for 1-2 minutes until the beans are warmed through
  5. Serve

Great as a side dish, or as tapas.  I love this with chicken and one of my favourite meals recently was chicken breast dusted with paprika, served with these beans and Cauliflower and Capers.
