In an unplanned episode I’m delighted to talk to you about the seasonal food stars for April and May.

Yes guys, this week the intro, and the sound is different because I’m recording directly onto my phone using my earbuds. I apologise if the sound quality is not as good as you are used to, but I didn’t want you to be left without your weekly dose!
Seasonal Stars April & May
At this time of year there seems to be a new star every week, there isn’t loads of varieties around like in the Summer months, and therefore, I like to keep things really simple and allow these wonderful gems to shine.
- Early salads – radish, watercress, rocket, pea shoots and spinach are all appearing now, and combined make a tasty salad that is great for getting our digestive juices flowing. Enjoy like the Mediterranean’s as a side dish or starter drizzled with olive oil.
- Horseradish – if you’ve only had this as a sauce with beef, try the root grated. It’s still hot but has a lighter zingy taste. Grate into warm salads or use for dressing, with meat and fish.
- Asparagus – the star of this late spring period. If you can buy young stems direct from the farm, you can enjoy it raw.
- New Potatoes – boiled in the skin they have much more flavour than older spuds, why not let them shine with a little butter, salt and pepper – simple yet delicious.
- Mango – not a UK fruit but in season right now in India and Sri Lanka, and when we are not lucky enough to be there, we can enjoy them here by the crate load!
