About Nicky
“I just turned 50 (yay!) and am aiming to live my best life going forward. Life’s too short to keep waiting for things to happen. In 2018 my youngest got diagnosed with Coeliac Disease, and at the end of the year I had a breast cancer scare.
I didn’t want my daughter to miss out / be excluded when diagnosed, and the idea for little foodies box was born.”
How did you feel when your daughter received the diagnosis?
Not knowing anything about gluten-free prior to her diagnosis, it was tough. I really felt for my daughter who had to take her own packed lunches to parties and I spent hours looking at labels.
The idea for the boxes was born out of the desire for her to be able to have lovely treats that everyone can enjoy.
Are you a good cook?
I’m a self-taught cook, and one of the things I think is important to share with anyone trying to create gluten-free cakes and treats is that it can be difficult. Things don’t always go to plan. But I’m honest about that, and I share the tips and techniques so that others don’t have to make the mistakes I did.
What can they expect from the boxes?
I want people to feel ‘wow’ when they open the boxes, so we include extra items. All the recipes are laminated, and my hope is that they will make them again and again.
What are your top tips for parents of newly diagnosed parents?
Don’t worry, it’s going to be okay!
Read the label, and learn how to read labels properly. Also, look for BROW’s which stands for:
- Barley
- Rye
- Oats
- Wheat
