Tom’s Fish Stew

My lovely builder Tom and I are always talking about food, he knows I love fish but rarely cook it as the Committed Carnivore hates fish. So, I was delighted when he arrived today with a bowl of his fish stew for my lunch. However, what was really amusing was that I had cooked him soup for his lunch, we are definitely food buddies!
This is his recipe, serves 2 or 3
Ingredients

  • Large onion chopped
  • 2 cloves garlic
  • 1 tsp chilli flakes
  • 2 tbsp chopped fresh parsley
  • Tin chopped tomatoes
  • Glass white wine
  • Fish stock cube
  • Water
  • 500g Salmon (half side of salmon)
  • 165g Jumbo king prawns (approx. – this is the pack size he buys)

Instructions
Soften onions in oil, this takes about ten minutes, do not let them brown! Add the garlic and chilli flakes and cook for a minute or two.
Add tinned tomatoes and cook for 10 to 15 minutes, most of the liquid should have evaporated.
Add the white wine and reduce, again this will take at least 10 mins
Add a tin full of water with a fish stock cube and add salmon, cook for 10 minutes.
Add the prawns and cook for a further 5 minutes.
Serve.
 
Tom has his with pasta or potatoes and veg for his evening meal.
I had mine for lunch with some crusty bread.
Either ways it’s delicious, and surprisingly easy.
