These are nutty flavoured biscuits, or biscuits for your nutty dog – the choice is yours!
The recipe was kindly given to my by my friend Julee who is a former chef, turned Prison Officer via owning a market stall selling doggie goods. She used to bake up massive batches of these biscuits in different varieties. These biscuits are gluten free as she found that customers were increasingly asking for gluten free options, she made hers with rice flour, but coconut flour is easier for me to source so I swapped it up, and you could easily source all organic ingredients if you wish.
I’ve only tried the plain version but have included different varieties at the end, please do let me know if you try them.
You can get cute dog themed biscuit cuttters from Amazon, and I like the smaller ones as my dog is only little (Woody is a Jack Russell). I tend to make double the quantity and freeze half the base mixture for another day. This still makes lots of biscuits and makes you very popular with your doggie loving friends if you give them as gifts.
Ingredients
- 250g coconut flour
- 100g porridge oats (fine cut or quick cook are best)
- 1/2 jar smooth peanut butter
- 3 medium sized sweet potatoes
Instructions
- Bake potatoes in skins until nice and soft, allow to cool slightly and scoop out the insides (and if you are like me then eat the skins with a bit of butter – cooks treat!)
- add all ingredients to a bowl and mix, if it is a bit loose then add more flour, a bit dry then add more peanut butter. The mixture is quite heavy and you won’t be able to work it like a normal cookie dough, but you should be able to mix the ingredients toogether and work into a ball
- Roll out the dough nice and thin, you want crunchy biscuits so the thinner the better. Cut shapes and place on a non stick baking tray (or several trays!). Keep re-rolling and cutting until you have used up all the dough
- Bake in the oven on the lowest setting, generally around 100 for a long time, remember you want a good crunchy biscuit which is great for your dogs teeth.
- Decant into airtight jars and they will last for ages. As stated previously they really do make great gifts.
Note from my lovely cleaner Rose, is that they are not for human consumption, after she tried one with a cup of tea one day!
