It’s difficult enough to look after a newborn without all the guests that come along too, and when my brother and his wife recently had a baby and didn’t manage to get breakfast until 2pm I made up this recipe for some energy boosting cookies to help them keep their energy levels up. Although they are not exactly healthy, they have oats which will release energy slowly and goji berries for their antioxidant properties, and they taste great! I got a lovely message the next day from my sister-in-law to say that she was enjoying them and has the jar placed next to her chair so she can nibble on them whilst feeding the baby.
I love making cookies, I often take them for gifts to friends, and I always try to have some in the house incase of guests. Click this link for my more traditional cookie recipes, but I thought this one deserved a page of it’s own. I like my cookies slightly doughy in the middle, if they are cooked through then they are biscuits, but if you do prefer a biscuit then just cook for a minute or two longer
Ingredients – makes about 20 cookies
- 100g unsalted butter (room temperature)
- 150g golden castor sugar
- ½ tsp vanilla essence
- 1 large egg beaten
- 90g plain flour
- ½ tsp salt
- ½ tsp bicarbonate of soda
- 75g porridge oats
- 40g dried Goji Berries
Instructions
- Cream the butter and sugar together until light and fluffy
- Add egg and vanilla and mix thoroughly, beat in flour
- Mix through berries (you want to have some berries in each cookie)
- Drop spoonfuls of the mixture on a non-stick baking tray and cook at 190 for 12 minutes
- Allow to cool for a couple of minutes on the baking tray before transferring to a wire rack to cool fully. Will keep for about a week in an airtight jar.
