In this week’s episode, I talk to Simone Summers about her health journey and how she has used her own experience to help others.

Approximately 7 years ago, Simone was left with severe concussion after being involved in a car accident. She then struggled with post concussion syndrome which meant that she suffered from headaches, dizziness and fatigue. Unfortunately Simone could not teach any more, so she started to coach which has always been a passion of hers as she loves to share knowledge.
Simone found that she still had constant headaches and had tried many things to stop them. She was contacted by a friend who ran an Eating for Brain Health online course that could help with her headaches. The course helped her focus on reducing inflammation, and guided her through exactly what she should (and shouldn’t) be eating.It was tough, but the results effect was dramatic. Because of the help that it had given to her, she wanted to help others share their knowledge and wanted to teach others how to create courses to be able to help other people.
Simone’s health journey
Simone has always been very conscious of food, stemming from her sister having coeliac disease from a young age. Simone helped to cook the meals at home and felt that she had to learn about foods so that she could cook the right meals for her sister. During her teens, Simone started coaching and found religion. This changed her mindset and she stopped eating meat within her diet.
After the accident, Simone spent a lot of time alone whilst recovering. She was in pain, she spent about 9 months in bed, she could not read, she did not eat properly; everything was really tough for her. Eventually, Simone started to find things a bit easier and slowly began to get back to normal. She was then involved in another accident which caused injury to her knees, setting her back again.
Over a year passed and Simone stopped teaching and started coaching. She then received a message from a friend telling her about the online course that would help her. After 90-100 days she no longer felt inflamed, she did not have a headache and she was feeling much better.
Simone now
Simone is very able now to anything. She has a personal trainer, she has her own business, she loves to learn through online courses. Simone likes to understand food, how it is created and how it affects the body. She runs masterclasses now covering a variety of subjects.
Simone now has an academy full of different online courses, created by others. She encourages anyone that knows what they are doing to share their knowledge to help others. Her focus is what, when and how information is shared. Her website can be found HERE.

- What is your most positively memorable meal? I love pasta and pesto, so my friend took me to a restaurant in LA that serves the world’s best pesto!
- What food reminds you of childhood? Lasagne was one of my favourites, using slow cooked bolognese sauce. If my Father cooked, it would be a creamy salmon pasta.
- What have you got for tea/dinner? I am having a salad with beans, followed by vegan chicken nuggets with vegan chilli mayo on the side.
