Vegan Curry Soup

So I asked my husband a couple of weeks ago if he wanted vegan curry soup for lunch and he turned his nose up and said he'd grab a sandwich at work instead.  The soup went into the freezer and when offered a vegetarian curry soup a few weeks later he jumped at it.  He's not alone in his prejudice, take me back less than a year and I would have probably done the same, but after actually cooking a lot of vegan recipes (and not telling him when he eats them!!) I now know that they can be really...

Vegan Tamarind Curry

I love a vegetarian curry, and this one is no exception, it’s actually a vegan curry so it really is suitable for everyone.  Tamarind is slightly sour, if you haven’t tried it before give it a go, it adds a great depth of flavour.  This makes 6 good size portions, and as with most of my recipes is great for leftovers, or you can even use it as a base for my Vegan Curry Soup. I made this version with my summer veg box, I do like a curry even in summer if its a colder evening and you can change...

Day 66

It’s been a really mixed few days for me, I’ve found two new really good farm shops, but I’ve felt a bit limited by my choices and our diet has felt a bit ‘samey’ so my aim for next week is to visit one of the independent Asian stores in Walsall and see if I can find some inspiration.  Unfortunately I did have to go to the supermarket for some cleaning items, and surprise surprise I ended up getting two of everything because they were on offer!! However I didn’t get distracted by any food...

Pigs Cheeks with Pasta

Don't be afraid of pigs cheeks, they are really tasty, have virtually no fat, and really cheap. This recipe serves 4 with a side of veg, or two plus two good lunches, it has hardly any ingredients so is a really economical meal, coming in at much less than £5! The pigs cheeks take a while to cook, but the active time is quite low in this recipe as they just cook away happily for two hours so you can walk the dog, have a snooze, whatever takes your fancy!!  It's all...

Day 56

Today is the first day I’ve shopped since my last blog post – 10 days ago.  Last night we finished the last of the veg box from a fortnight ago (potatoes and cabbage) along with stuffed burgers I froze a few weeks ago and spicy beans made with some store cupboard essentials. This isn’t that unusual for me, I find periodically I’ll just have so much food in the house (particularly the freezer) that I’ll just have to create meals around what we have in order to make some room! They are...

Day 46

It feels much longer than 8 days since my last post. So much has happened to me personally and professionally in the last few days, however I can't believe that I'm already over halfway through the challenge. I'm sitting on the train writing this after tucking into a very large cheese and ham baguette from the International  Cheese shop at Victoria station, travelling back from the Love Supreme festival.  The food there was really great, there wasn't one dodgy burger van amongst...

Veg box success

Community Supported Agriculture scheme, CSA for short.  Until a few hours ago I had never heard of this amazing scheme, or Woodhouse Farm & Garden, and I can’t understand why not. I’ve just got back from visiting Woodhouse Farm and Garden, and chatting with the amazing Andrew and his daughter about the farm and its history.  I felt so uplifted by my visit, their story and the CSA scheme that I had to come straight back and write about them, whilst munching on their amazing raspberries. The...
