Carrot and Cumin Bread Rolls

These are lovely soft and moist buns and they have a really interesting taste, so you could just have them on their own. I’ve made them for breakfast as they are much quicker than traditional white rolls. They are brilliant as burger buns as they are slightly dense and so stand up to a meat burger, and also keep well enough for a packed lunch the next day. I’ve also made them with parsnip – which I actually preferred but my hubby said they were a bit sweet for him. Ingredients - makes 6 – 8...

Plant Based Diet

What do you need to know if you want to eat a more plant based diet?

There has beeen an enormous interest in vegan diets of late, and I have noticed more of my clients, and friends, are becoming vegan. Even more are considering it; or at the very least, eating a more plant based diet. A recent study by the Vegan society found that over 20% of respondents would consider becoming vegan. We used to travel to India regularly and I think that was the beginning of my interest in eating a more plant based diet. I understand that not eating certain meats can be faith...

Summer Greens, Beans and Lentil Curry

This tasty yet light curry is perfect in the summer, it’s pretty quick to cook and you can keep it for a few days in the fridge. I sent a portion to a friend who was recuperating in hospital, I packed some curry along with basmati rice and popped in into a tiffin box to be delivered to her nice a warm. It’s a super healthy dish, full of iron, and so perfect for anyone feeling a bit under the weather. Ingredients – serves 2-3 • Large onion finely chopped • 2 tblsp vegetable oil • 2 garlic...

Oat and Apricot Savoury Biscuits

If you follow me on Instagram you will know that these biscuits were created entirely by accident, however, once I got over the shock of them not being sweet they were actually quite nice.!! We ate them with a bit of cheddar as a snack and even my husband, who normally turns his nose up at having any kind of fruit with cheese (he’s more of a celery and tomato fan) enjoyed them. Ingredients • 100g plain • 75g porridge oats • 50g dried apricots – chopped • 80ml rapeseed oil • 1 tblsp ground...

Frittata

What is the difference between frittata and a Spanish Omlette? For me the only difference is that a frittata is new potatoes and a Spanish Omlette is skinless ‘old’ potatoes. I’m not sure if that is accurate, but that’s how we differentiate in our house. There are times of the year when the ingredients compliment the way we are living, and in the summer, when the weather is lovely new potatoes combined with eggs and any fresh veggies from the garden/farm shop are the perfect combination. We...

Pea and Baby Aubergine Curry

On a whim I bought some baby aubergines from the asian supermarket, they sat in the fridge for a few days until I had some peas in my weekly veg box and I thought I would pay homage to the Asian store and created this curry. It’s lovely and light and perfect for the summer, and of course you can use normal aubergines and frozen peas, it will taste just as good! Ingredients – serves 2 -3 • 1 small onion finely diced • 2 large tomatoes chopped • 250g Baby Aubergines Chopped • 100g prodded fresh...
