This is a perfect quick lunch meal that has a good level of protein, some healthy fat and at least three portions of vegetables. I make this with ham for my hubby and but I prefer smoked salmon so swap it for me! I love a dressing on my salad, and by adding the horseradish it has a lovely zing, if you don't eat dairy then swap then you can use soya yoghurt.
